Drying the malt nowadays often happens in closed drums, but some still light a fire to dry the malt. Of course the smoke of this characteristic flavor is known as Bamberger Rauch Beers who all have a smoked birch flavour. Emelisse Rauch Beer contains malt smoked over wet beech wood. That gives the beer its distinctive flavor, but not as strong as in the Bavarian Rauch Beers.
The classic smoked beers hail from Bamberg in Franconia, Germany. These are made using malt that has been smoked over beechwood. The insistent smokiness may be applied to any lager style. In North America, the same technique has been used to make smoked porter. Whiskey malt beers are made using peat-smoked malt.
