Description

Recently, our brewer was approached by De La Region of the Leidsch Dagblad. A section that deals with local products around Leiden. They had the question whether locally grown wheat beer could be used for brewing. The wheat comes from Hazerswoude and is a byproduct of the potato. To avoid the soil to become poor the potato farmer grows wheat at regular intervals. This wheat is normally used as cattle feed. It was a challenge to find the right recipe for a beer by experimenting with the wheat. That was found by our brewer by mixing the wheat with an equal quantity of barley malt. In addition we used specially developed yeast called Weihenstephaner Weizen. This created a nice German-style white beer. Weizen means, just like the old Dutch word "wit" just wheat. So witbier is a wheat beer! The yeast used is also a fast-acting yeast which made the lagering process a lot shorter than usual. However it took twice as long as normal to brew the beer. This is because we did not malt the wheat.

German Hefeweizen

Depending on the style can range from pale and light body to dark brown with full body. Wheat beer is characterized by its cloudy appearance and its banana and sometimes vanilla aftertaste.
