"I've been playing around with smacked malts for several years with some interesting results. Making Bocks, Doppelbock and Imperial versions of the same. I won the SOBA champion beer at the 2014 NHC with a Rauchbock, here comes another one using Gladfields Manuka smoked Vienna and Chocolate malts with Wakatu hops. Hope you enjoy a 100% Kiwi beer refined over time at "The Grey Street Brewery" Onehunga, brewing fine ales, stouts and porters (and some other stuff since 1994).
The classic smoked beers hail from Bamberg in Franconia, Germany. These are made using malt that has been smoked over beechwood. The insistent smokiness may be applied to any lager style. In North America, the same technique has been used to make smoked porter. Whiskey malt beers are made using peat-smoked malt.
