Chantelope was brewed with a similar malt bill – Pilsner, Rye and Wheat – to the brewery’s Cheval D’Or Saison, and Amarillo, Tettnang and Saaz hops. The beer was then fermented with Brettanomyces Bruxellencis yeast, resulting in a 6.7% abv and 20 IBU Belgian-style ale described as being “well balanced and refreshing”, and like “a rustic Saison, with slight tart lemon in the finish and low hopiness.”
Fruity esters dominate the aroma. Clarity is good with a large foamy head on top. The addition of several spices and herbs create a complex fruity or citrusy flavor. Light to medium bodied with very high carbonation. Alcohol level is medium to high.
