St. Luke’s Verse aged in Ice Wine Barrels for 6 months and blended with MaddAddamites NooBroo
A cache of our St. Luke’s Verse winter gruit hibernated for six cold months in ice wine barrels, then emerged to be accented with our summer gruit, MaddAddamites NooBroo. The intricate flavours and aromas created in this blend harmonize well, and are further broadened by the tart, slightly tannic impressions contributed by the aging in ice wine barrels.
This beer pours a hazy deep-gold to light copper, with a creamy white head. It is redolent of lavender, thyme and rosemary, with faint wine notes. The flavour is tart and fruity, with berry notes and herbal tannins. It is delicate on the palate and offers a clean finish.

A catch-all category that we use to classify all of those ancient or resurrected styles of antiquity that are appearing more and more in brewing today. From sahti to heather ale to sorghum beer to gruit, and beers like Adam and Midas Touch, these ales will vary tremendously in character from one another. Many are unhopped, strength can vary, but all are a glimpse into brewings past.
