Tugwell Creek Mad Marion
Mad Marion recalls a time when meads were fortified to preserve their cellaring capacity like that of traditonnal ports. A sweet, well balanced fortified mead rich in big berry flavour, soft tannin, and subtle hints of vanilla from French oak ageing.
Pairings: Strong cheeses, nuts, and less sweet desserts.
Honey wine, which tends to be quite strong and alcoholic-tasting, as honey ferments very well. Mead is often made with other ingredients for flavour, be they fruit or grain. The latter is known as braggot.
