Trafalgar Norfolk County Baked Apple Mead
The flavour of honey depends on the climate, flora and geology or "terroir" of the region. Throughout Ontario, the different terroirs result in uniquely flavoured honet which can be fermented into delightfully different braggot style Meads. In this, the fourth in our series of "Mead terroirs", we have used wild flower honey and apples from Norfolk County fo fashion this very refreshing Mead. Enjoy it gently chilled. Cheers!
Honey wine, which tends to be quite strong and alcoholic-tasting, as honey ferments very well. Mead is often made with other ingredients for flavour, be they fruit or grain. The latter is known as braggot.
