HISTORY & STYLE
Gruits take inspiration from centuries-old brewing tradition; a time before the Bavarian Purity Act of 1516 that declared that all beer be made solely with barley, hops, and water. In gruit ale, herbs, spices and other botanicals replace a dominant hop character, throwing open the door to experimentation with flavour and beer terroir.
Tyrannosaurus Gruit pours brilliantly clear with a red cranberry colour. Aromas of beets and berries give way to subtle spruce. The flavour reflects beet flavour with resinous, peppery spruce notes. A hint of juniper follows. The finish is bright and crisp.
Beet salad with lentils; beet-leaf-wrapped chèvre; oatmeal crepes with vanilla & wildflower-honey-scented ricotta & rosehip syrup; beet-cured wild salmon gravlax; old clothbound cheddar.

A catch-all category that we use to classify all of those ancient or resurrected styles of antiquity that are appearing more and more in brewing today. From sahti to heather ale to sorghum beer to gruit, and beers like Adam and Midas Touch, these ales will vary tremendously in character from one another. Many are unhopped, strength can vary, but all are a glimpse into brewings past.
