Rockford Kirsche Me Under the Cherry Tree
This unique wheat beer uses smoked malt as an extra variety to the traditional malts used to brew a Dunkelweizen. Dunkelweizens are hybrid beers that reflect the malty richness of a Munich Dunkel with the fruity yeast character and wheat profile of a Bavarian Weizen. We used a barley malt that has been smoked over a cherry wood fire to add further complexity to the malty character. This wheat beer is malt forward and bready with a smoky and slight fruity background.
The classic smoked beers hail from Bamberg in Franconia, Germany. These are made using malt that has been smoked over beechwood. The insistent smokiness may be applied to any lager style. In North America, the same technique has been used to make smoked porter. Whiskey malt beers are made using peat-smoked malt.
